So how many of you parents have date nights at home sometimes? It sure is cheaper and easier than scheduling and paying for a babysitter. And if you are avid fans of House of Cards (like my husband and I are) then it’s the perfect time to cozy up with some pub-type grub and snuggle on your couch for some binge TV watching. And thanks to Sam’s Club, I have got a tasty fish and chips dinner you are sure to LOVE!
During the month of March, Sam’s is featuring its wide variety and sustainable selection of quality frozen fish products. March 5th and 6th happen to be Fish and Chips week, featuring Sea Cuisine® Beer Battered Cod Fillets with Ore-Ida® Crinkle Fries. When I order fish and chips out, I always want malt vinegar to shake on my fried fish. I just love the salty, malty, earthy flavor it adds to the crispy fish. Since the fish is beer battered, I thought a beer cheese dip would be really fun to make as a sauce for the crinkly fries. It makes the meal seem a little more special than just using ketchup and the cheese dip can be whipped together in less time than the fish and chips take to bake.
Sure it’s a lot of fun to go out to a pub and order a pint of beer with some authentic fish and chips out of the fryer, but I’m creating basically the same meal at home for much less money (thanks to Sam’s Club and their terrific deals right now) plus the convenience and comfort of staying at home in your sweats. And this delectable seafood dinner can be served hot and ready for your TV trays in less than 30 minutes. Woo Hoo!
I found my box of beer battered cod on an end cap of the frozen section… just $9.98 for an entire box which will easily serve six (or three separate date nights). And then the fries were in the frozen “Bread” aisle. With this size bag of crinkle fries, I’ll have a ton left over for kid movie nights too!
The fish is lightly battered and crispy – baked in the oven instead of fried. I baked the cod fillets on the same pan as the fries – both at 450 degrees for about 25 minutes. So easy and delicious!
And just look at that cheese sauce… it’s tangy and delicious and will take on the flavor of whatever beer you add to it. Since it’s March, I decided to use Guinness, but a light wheat beer or a hoppy IPA would also be excellent choices.

Beer Cheese Dip
Ingredients
- 1 T. butter
- 1 1/2 T. flour
- 1/4 c. milk
- 1/4 c. + 2 T. beer
- 1 t. prepared horseradish
- 1 t. Worcestershire sauce
- 6 oz. extra sharp cheddar cheese shredded
Instructions
- Melt butter in small sauce pan over medium heat. Whisk in flour and cook for 1 minute. Whisk in the milk and beer and bring to simmer. Stir in the horseradish and Worcestershire sauce. Cook sauce for 2 - 3 minutes, whisking entire time.
- Remove sauce from heat. Add cheese and stir until melted. Serve immediately as a dip for the french fries.
