You can air fry lots of mini versions of your favorite foods in 6-ounce ramekins. And crustless quiche is a great high-protein meal option. You can make a delicious quiche however you like. They are customizable and limited only by your imagination. With my recipe, you can mix and match your favorite kind of cheese with breakfast meats and veggies.

These recipes work well for when you don’t want to turn on your oven. For when you are cooking for just one or two people. And they are also terrific for meal prepping.

Ingredients for air fryer quiche

  • Eggs – I use two large eggs and one egg yolk to make two individual quiches.
  • Dairy – Half and half and sour cream combine with the eggs to make the quiche light and fluffy. If you have heavy cream on-hand you could use that instead of the half and half.
  • Seasonings – For my test recipe, I use a combination of mustard, salt and two kinds of pepper. Both black pepper and red pepper flakes.
  • Fillings – For each quiche, you’ll use a couple of tablespoons of cheese and a couple of tablespoons of veggies and/or breakfast meat. As pictured, my quiches are filled with steamed broccoli, feta and mozarella cheeses.
  • Variations – Use your own tastebuds to be your guide. Other filling suggestions are green onions, Swiss cheese, bacon, cheddar cheese, breakfast sausage links, Parmesan cheese, roasted red peppers, sauteéd mushrooms or even air fryer potato wedges.

Instructions for mini quiches

Grease two 6-ounce ramekins with cooking spray or softened butter. In a large bowl, whisk together the eggs, egg yolk, sour cream, mustard and seasonings until smooth. Layer the cooked broccoli and feta cheese in the bottom of each ramekin. Evenly pour egg mixture over top. Then sprinkle each quiche evenly with the shredded mozzarella cheese. Place the ramekins in your air fryer basket. Air fry them at 325 degrees F for 12 – 14 minutes. For complete list of ingredients, keep scrolling to the bottom for my free, printable recipe card.

Serving suggestions

To make this a complete breakfast on a lazy weekend morning, serve the quiche with muffins or coffee cake and some fresh fruit. Here’s some recipe suggestions –

Storage directions

This recipe is easily doubled or tripled so you can enjoy a quiche all week long. They are just as tasty the next day! Cover the cooked quiche with aluminum foil or plastic wrap. Or place each dish in an airtight container. They will stay fresh in the refrigerator fo 3 – 5 days. I don’t recommend freezing them.

Equipment

Ingredients

  • 2 large eggs
  • 1 large egg yolk
  • 1/4 cup fat free half and half
  • 1 tbsp sour cream
  • 1 tbsp yellow mustard
  • 1/2 tsp salt
  • 1/4 tsp cracked black pepper
  • 1/4 tsp crushed red pepper flakes optional
  • 1/4 cup frozen broccoli florets
  • 2 tbsp feta cheese crumbled
  • 2 tbsp Mozzarella cheese shredded

Instructions

  • Microwave the broccoli according to package directions. Squeeze out the excess water and chop fine.
  • Grease two ramekin dishes with vegetable oil or softened butter.
  • Divide the chopped broccoli evenly between the two dishes. Sprinkle one tablespoon of crumbled feta cheese over the top of the broccoli in each dish.
  • Whisk together the eggs, egg yolk, half and half, sour cream, mustard, salt, and peppers.
  • Pour the egg mixture into the two ramekins, about 1/2 cup in each.
  • Top each quiche with the shredded Mozzarella cheese.
  • Place the dishes into the basket of your air fryer. Air fry the quiche at 325 degrees F for 12 - 14 minutes, or until the quiche is puffed up and firm to the touch. Allow to cool for a few minutes before serving.
