Dry toasting fresh garlic cloves before adding it to this easy, creamy white sauce is the key to this pizza. The peels stay on as the garlic gets warm and toasty in a skillet. Which removes the bitter, raw garlic flavor and leaves behind sweet, nutty deliciousness. Combined with sour cream, mayo, a little pickle juice, dried dill and salt – it makes a white pizza sauce that is divine. You could use it as a delicious veggie dip too! This dill pickle pizza recipe is a real crowd pleaser, especially for pickle people.

Ingredients for the best pickle pizza
- Pizza Crust – I’ll leave this up to you. For testing purposes I used these artisan thin crusts. They are 8-inches in diameter and one sauce recipe will generously cover two pizzas. You can make this recipe with your favorite homemade pizza dough as well. Or use store-bought dough.
- White Sauce – Made with sour cream, mayonnaise, dill pickle juice, dill weed, salt and dry toasted garlic cloves.
- Pickles – Quality matters here. This is my personal favorite brand of dill pickle slices. You can freshly slice whole dill pickles. Or use your favorite brand or even spicy dill pickles.
- Cheese – I like a blended pizza cheese when making pizza at home. You could also freshly shred mozzarella cheese. Or add Parmesan cheese to the mix. One cup of shredded cheese for an 8-inch pizza. Or two cups of cheese for a 16-inch pizza.
- Additions – Feel free to add some crispy bacon or rotisserie chicken breast to your pizza.
Instructions
Preheat oven to 425 degrees F with the oven rack in the upper third position. Toast garlic cloves in a small skillet over medium heat, shaking pan occasionally, until fragrant and color of cloves deepens, about 8 minutes.
Combine the sour cream, mayonnaise, pickle juice, dill, salt and pressed garlic in a small bowl or glass measuring cup. Whisk until well combined.
Spread half the mixture (or all of it, depending on size of your pizza crust) in an even layer on top of a prepared pizza crust. Top with dill pickle slices. Top with shredded pizza cheese.
Bake the pizza according to your crust directions. Broil the pizza for the final 2-3 minutes, if you like a golden brown pizza.

Storage directions
Store any leftover pickle pizza in an airtight container. It will stay fresh in the refrigerator for 3 to 4 days. You can also freeze this pizza for up to one month. Just be sure to wrap it tightly in plastic wrap, then store in an airtight container. To prevent freezer burn.

Pickle Pizza
Ingredients
- 2 8-inch thin pizza crusts I used Stonefire brand
- 3/4 cup sour cream
- 1/4 cup mayonnaise
- 3 cloves garlic dry toasted and minced
- 1 tbsp dill pickle juice
- 1/2 tsp dried dill weed
- 1/2 tsp salt
- 24 slices dill pickles I used Grillo's brand
- 2 cups pizza blend cheese shredded
Instructions
- Preheat oven to 425 degrees F.
- Place an oven-safe baking sheet on top of a sheet pan. Place the thin crust prepared pizza crusts on top of the oven rack.
- In a small skillet over medium heat, dry toast the unpeeled garlic cloves, for 6 - 8 minutes, until they are fragrant and turning brown. Press them through a garlic press after they have cooled a bit.
- In a small glass bowl or measuring cup, whisk together the sour cream, mayonnaise, pickle juice, prepared garlic, dill and salt until smooth.
- Spread half the white sauce on top of each pizza crust. Top each crust with 12 slices of dill pickles. Top each pizza with one cup of shredded pizza cheese.
- Bake the pizza in the upper third of the oven for 10-12 minutes or until cheese is melted. Broil for an additional 2-3 minutes for a more browned color. Slice and serve.
