When I find a recipe I really like, I tend to make it a lot and in different variations. I discovered this buttermilk waffle recipe thanks to a restaurant in Tennessee, Aretha Frankensteins. My family and I visited a long time ago and I am a big fan of their boxed pancake mix, plus their homemade pancakes and waffles on the menu. The starting point for my strawberry cheesecake waffles recipe is thanks to their waffle recipe – waffles of insane greatness. They are easy to make at home!

The waffles are topped with a homemade fresh strawberry sauce. And then an easy sweetened cream cheese topping, which mimics the flavor of cheesecake. These strawberry cheesecake waffles are an indulgent treat for entertaining or just because.

Ingredients for strawberry cheesecake waffles

  • Dry Ingredients – A combination of all-purpose flour, cornstarch, salt, baking powder and baking soda. The cornstarch absorbs moisture and helps to keep the gluten from over-developing. Creating a light and tender waffle with a satisfyingly crispy exterior.
  • Wet Ingredients – A combination of full-fat buttermilk, milk, vegetable oil, egg yolk and vanilla.
  • Meringue – Egg white and sugar are beaten together until fluffy, then folded into the batter. Another technique to achieve crispy churro waffles.
  • Strawberry Sauce – When I tested this recipe, I used fresh strawberries that I’d picked myself and then frozen for later use. This sauce can be made with either fresh or frozen strawberries. Plus a combination of sugar, water, cornstarch and orange juice.
  • Cheesecake Topping – A simple combination of whipped cream cheese, powdered sugar and vanilla.

Instructions

In a large bowl whisk together the dry ingredients. In a separate medium bowl, whisk together the wet ingredients. In another small bowl, beat together the egg white and sugar until fluffy. Add the wet ingredients to the dry and stir together until just combined. Then gently fold the egg white mixture into the waffle batter. Allow the batter to rest for 30 minutes. Then follow your waffle makers instructions to cook six waffles.

While the batter is resting, prepare the toppings. In a sauce pan, whisk together the sugar, corn starch and water. Add the strawberries and orange juice and cook over medium heat until the strawberries are completely soft. Use a potato masher to mash the strawberries so the syrup is smooth. Cook for about 5 more minutes to thicken and remove from heat.

With a hand or stand mixer, whip together the cream cheese, powdered sugar and vanilla until smooth. Serve each waffle topped generously with the strawberry sauce and cheesecake topping.

  • 1 1/2 cups all-purpose flour

  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 2 cups full-fat buttermilk
  • 2/3 cup vegetable oil
  • 2 large eggs
  • 1 tbs sugar

Strawberry Sauce

  • 2 cups strawberries
  • 6 tbsp sugar
  • 6 tbsp water
  • 2 tsp cornstarch
  • 1 tbsp fresh orange juice

Cheesecake Topping

  • 12 oz whipped cream cheese
  • 1/2 cup powdered sugar
  • 1/2 tsp vanilla
Start Cooking

  • In a large bowl, whisk together the flour, cornstarch, baking powder, soda and salt. In a separate bowl, whisk together the buttermilk, oil, eggs, sugar and vanilla. Pour the wet ingredients into the dry and mix until waffle batter is completely smooth. Set aside for 30 minutes. Then prepare the waffles according to your waffle iron's directions. Most use about 3/4 cup of batter per waffle. Mine made six full size Belgian waffles.
  • While you are letting the waffle batter rest, prepare the toppings...

Use a potato masher to mash the strawberries so the syrup is smooth. Cook for about 5 more minutes to thicken and remove from heat.

  • 1 1/2 cups all-purpose flour

  • 1 tsp baking powder
  • 1/2 tsp baking soda
