This recipe for Reverse Sear Steak guarantees a tender and delicious steak and with a correct internal cooking temperature every time.

I love the experience of eating at a high end steak house. Here in Cincinnati, Jeff Ruby’s is the best. But I also pride myself on being able to cook a restaurant quality steak in my own home. The key is baking the steaks at a low temperature until they reach your desired level of doneness – for me that’s a medium cook. Then quickly searing the outside of the steak in a bit of butter to finish. This method for Reverse Sear Steak will work for any cut of steak.  But if I’m going all out on steak at home, I personally prefer thick-cut filet mignon.

How to Reverse Sear Steak

  1. Marinate the steaks or just season them with salt and pepper (both sides).
  2. Preheat oven to 300 degrees F.
  3. Place the steaks in a shallow baking dish.
  4. Bake the steaks until they reach the desired internal temperature.
  5. Heat two tablespoons of butter in a non-stick skillet over medium-high heat. 
  6. Sear the cooked steaks for one minute on each side.
  7. Allow the steaks to rest for a couple of minutes and serve.

Temperature Guide for Reverse Sear Steak

I don’t recommend cooking your steak above medium, but it’s your personal preference – which is the advantage of cooking your own steak at home.

RARE = 135 degrees F

MEDIUM RARE = 140 degrees F

MEDIUM = 150 degrees F

MEDIUM WELL = 155 degrees F

WELL = 165 degrees F

Ingredients

  • 4 6 oz filet mignon steaks
  • 2 tbsp butter
  • salt and pepper

Instructions

  • Preheat oven to 300 degrees F. 
  • Season the steaks with salt and pepper on both sides. Place in a shallow baking dish.
  • Bake the steaks until desired internal temperature is reached. Check with a digital thermometer to be sure.
  • Remove the steaks from the oven.
  • Melt the butter in a non-stick skillet over medium-high heat. 
  • Sear the cooked steaks for one minute on each side. 
  • Allow the steaks to rest for a few minutes and serve.
