I don’t have a smoker so I make pulled pork at home by slow cooking it. Or if I want to save time but not sacrifice on flavor I cheat. I go to my favorite BBQ joint and order a pound or two of pulled pork. No one has to know!

I also love a good soft taco. One of my recipe creation goals is to have a taco dish for everyone’s tastes. This pork taco recipe is the latest addition to my collection. I hope you love it! Please consider leaving me a star rating with your honest opinion if you try them.

Ingredients

  • Pork – This recipe is written for pulled and tender pork. It’s a great recipe for leftover pork like carnitas too.
  • Salsa – A combination of corn, red onion, cilantro, lime juice and salt. When testing I used fresh corn on the cob. But you could use an equal amount of cooked frozen or canned corn instead. You could also add one minced clove of garlic.
  • Sauce – A creamy combination of mayonnaise, both chipotle and BBQ sauces and fresh lime juice.
  • Cheese – I like shredded Monterey Jack cheese for these tacos. But use your favorite, like cotija cheese or queso fresco.
  • Tortillas – My preference is flour tortillas, but you could use corn tortillas instead.

Instructions

  • Follow the instructions for making my slow cooker pulled pork recipe. This can be done up to 2 days ahead of time.
  • Keep the pulled pork stored in the refrigerator in an airtight container until ready to use. Or you can meal prep pulled pork and pull some from the freezer!
  • Mix up the sauce ingredients.
  • If using fresh corn, cook it and allow it to cool. Use a sharp knife and cutting board to carefully cut it off the cob. Then stir it together with the onion, lime juice, salt and cilantro to make the corn salsa.
  • Warm up some flour tortillas in the microwave. Fill the tortillas with pulled pork, corn salsa and shredded Monterey Jack cheese.
  • Top the tacos with plenty of the creamy chipotle BBQ sauce.

Storage directions

Store any leftovers of these taco components – pork, corn salsa, chipotle BBQ sauce – separately in airtight containers. They will stay fresh in the fridge for 3 – 4 days.

  • 1 1/2 lbs pulled pork
  • 12 small flour tortillas
  • 1/3 cup BBQ sauce
  • 3 tbsp chipotle adobo sauce
  • 3 tbsp mayonnaise
  • 1 tbs lime juice divided
  • 2 ears corn on the cob or about 1 1/2 cups of cooked corn
  • 3 tbsp red onion finely chopped
  • 2 tbsp fresh cilantro chopped
  • 1/2 tsp salt
  • 1 1/2 cups Monterey Jack cheese shredded

Instructions

  • Prepare pulled pork according to the link in this recipe, Slow Cooker Recipe. Or purchase pulled pork from your favorite BBQ joint.
  • Whisk together the sauce ingredients - BBQ sauce, chipotle adobo sauce, mayonnaise and 1/2 tablespoon of lime juice.
  • Cook the corn on the cob, let it cool and carefully cut it off the cob. In a clean bowl, mix the corn with the chopped red onion, cilantro, remaining lime juice and salt.
  • Warm the tortillas in the microwave. Fill each tortilla with pulled pork, creamy chipotle BBQ sauce, corn salsa and shredded Monterey Jack cheese.

Ingredients

  • 1 1/2 lbs pulled pork
  • 12 small flour tortillas
  • 1/3 cup BBQ sauce
  • 3 tbsp chipotle adobo sauce
  • 3 tbsp mayonnaise
  • 1 tbs lime juice (divided)
  • 2 ears corn on the cob (or about 1 1/2 cups of cooked corn)
  • 3 tbsp red onion (finely chopped)
  • 2 tbsp fresh cilantro (chopped)
  • 1/2 tsp salt
  • 1 1/2 cups Monterey Jack cheese (shredded)
