Chicken a la King is a retro dish that is a delicious combination of tender chicken and creamy mushroom sauce. There’s several stories floating around about its origins. The New York Times credits William King, a cook at the Bellevue Hotel, with inventing it.
I’m always a fan of a mostly homemade chicken dinner, made easier with rotisserie chicken or other pre-cooked chicken. A big batch of this creamy sauce can be made ahead for a quick weeknight meal. And served as pictured over buttered noodles. Or spooned over buttermilk biscuits.

Ingredients for chicken à la king
- Chicken – Pre-cooked chicken is the way to go for this recipe. It’s a terrific way to use up leftover chicken or turkey.
- Butter and Flour – Melted butter and flour are traditional to the original recipe. Cooked together it provides the structure for the rich cream sauce.
- Seasonings – I tested the recipe with a combination of Worcestershire sauce, garlic powder, onion powder, salt and black pepper.
- Vegetables – My recipe prioritizes ease, so I use both canned mushrooms and jarred pimentos. The green pepper alone stands out as the bright, fresh vegetable. Feel free to add some fresh herbs. Or use fresh mushrooms instead of canned.
- Chicken Broth – Use the best quality broth or homemade chicken stock if you have some on-hand. You can also add a splash of white wine if you like.
- Sour Cream – I like the tangy flavor the sour cream adds. But you could use heavy cream instead.
- Starch – I tested my recipe over buttery egg noodles. But you could serve it over toast points (which is traditional). Or make a batch of buttermilk biscuits. The sauce would also be great over cooked rice.
Instructions
In a large non-stick skillet over medium heat, melt the butter. Add the flour and seasonings and cook for 1-2 minutes, stirring often. Add the chopped green pepper, drained mushrooms and pimentos. Cover and cook, stirring occasionally for 4-5 minutes.
Pour in the chicken broth and stir to combine. Simmer, stirring occasionally, until the sauce is thickened. Add the chicken and stir to combine. Cover and allow to simmer as you prepare the noodles.
Add the Worcestershire sauce and stir in the sour cream until well combined. Allow to simmer for a couple of minutes. Serve the creamy chicken a la king over the cooked noodles.

Storage directions
I like to stir the creamy sauce together with cooked noodles for leftovers. Store the cooked chicken a la king in an airtight container in the refrigerator for 2-3 days. If you want to freeze the sauce, I would not mix it together with anything. It will stay fresh in the freezer for up to one month.

Chicken a la King
Ingredients
- 3 tbsp butter
- 3 tbsp flour
- 1 green pepper diced
- 4.5 oz canned mushrooms drained
- 4 oz jarred red pimentos drained
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups chicken broth
- 3 cups rotisserie chicken
- 1/2 cup sour cream
Instructions
- In a large frying or saute pan over medium heat, melt the butter.
- Add the flour and dry seasonings - garlic powder, onion powder, salt and black pepper.
- Stir and cook for 1-2 minutes until a paste forms and it is fragrant.
- Add the chopped green pepper, drained mushrooms and drained pimentos. Stir well and cover the pan. Allow to cook for 4-5 minutes, stirring occasionally.
- Stir in the chicken broth, scraping up any browned bits in the bottom of the pan. Simmer and stir until the sauce thickens.
- Add the chopped rotisserie chicken. Stir well to combine and cover with a lid. Allow the sauce to simmer on low while you prepare the noodles.
- When ready to serve, add the Worcestershire sauce and sour cream. Stir until smooth and allow to simmer until the sauce is warmed through.
- Serve the chicken a la king with cooked and buttered egg noodles.
