This quick apple cider glazed chicken breasts recipe is a perfect fall dinner. It can work both as a weeknight meal or dinner party stunner.

Tender chicken breasts bathed in an apple cider glaze paired with your favorite fall sides. This cozy dinner made in one large pan is on the table fast. During the ‘ber months, it might just become a weeknight chicken dinner staple. I’m always so excited when I see fresh apple cider in my grocery store again. And this recipe is the perfect way to show it off.

Ingredients
- Chicken breasts – This recipe is meant for boneless chicken.
- Apple cider – Use filtered or unfiltered cider. This recipe is not meant for alcoholic cider or apple juice.
- Butter – Combines with the flour coating to help thicken the sauce. And of course fat adds flavor. If you prefer, you could use olive oil instead.
- Flour – Helps to both brown the chicken and thicken the apple cider glaze.
- Dijon Mustard – The acidity of the mustard helps to balance the sweetness of the cider.
- Shallots and Garlic – Use fresh, chopped finely.
- Seasonings – Dried sage, salt and pepper help to round out the flavor profile of this dish.
Instructions
Trim any visible fat from the chicken breasts. Dredge each (both sides) in flour. Heat the butter in a large skillet over medium heat until it is melted. Add the chicken and cook for 2-3 minutes per side. Until the chicken is starting to turn golden brown (it is not fully cooked at this point).
Use tongs to remove the chicken to a clean plate. To the skillet add the shallot and garlic and stir until fragrant, about one minute. Add the sage, salt and pepper and the Dijon mustard. Continue to cook for a couple of minutes as you stir.
Gently pour in the apple cider. Whisk to combine. Bring to a boil then reduce till it’s simmering. Return the chicken breasts to the pan and cover with a lid. Cook over gentle heat until the internal temperature registers a minimum of 165 degrees F.
Place the cooked chicken in a clean serving bowl. Continue to cook the apple cider glaze for a couple of more minutes and whisk as you cook so that it forms a nice glaze. Pour it over the chicken and serve.
Serving suggestions
Here’s a simple side dish I came up with to pair specifically with this fall themed chicken dish –
In a large sauté pan, melt 3 tablespoons of butter. Add one bag of frozen sweet potato cubes and one bag of frozen corn. Season as desired – I added about a teaspoon of salt and a teaspoon of Tajin. Cover the pan, stir occasionally for 6 – 8 minutes, or until the potatoes have softened.
Add 5 oz fresh spinach and a generous squeeze of lime juice. Cover the pan until the spinach reduces in volume. Stir again and cook until the spinach is wilted. Serve with the chicken.

Store leftover chicken and glaze in an airtight container. It will stay fresh in the refrigerator for 2-3 days.

Apple Cider Glazed Chicken
Ingredients
- 2 lbs boneless, skinless chicken breasts
- 1 1/2 cups apple cider
- 3 tbsp butter
- 1 cup flour
- 1 med shallot finely chopped
- 2 cloves garlic minced
- 2 tbsp Dijon mustard
- 1 tsp dried sage
- 1 tsp salt
- 1/2 tsp black pepper
Instructions
- Place the flour in a shallow bowl. Dredge both sides of each chicken breast in the flour so they are lightly coated.
- In a large, non-stick frying pan, melt the butter. Add the chicken. Cook for 2 - 3 minutes per side, or until the chicken begins to brown. Remove the chicken to a clean plate.
- Meanwhile to the same pan, still over medium heat, add the shallots and garlic. Cook for 1-2 minutes, stirring often until fragrant.
- Add the mustard, sage, salt and pepper. Stir to combine.
- Pour in the apple cider and whisk until smooth. Bring to a boil. Then reduce heat so the glaze is simmering.
- Return the chicken to the pan with the apple cider glaze. Cover the pan and simmer the chicken in the sauce for about 10 minutes. Check the temperature of each chicken breast. They need to be a minimum of 165 degrees F for safe eating.
- Place the cooked chicken into a clean bowl. Continue to simmer the apple cider glaze if you'd like it to be a little thicker. Then pour it over the chicken to serve.
