I was craving a fresh strawberry dessert but there’s still snow on the ground and it’s mid February. So I created this easy cobbler recipe with brown sugar and cinnamon. The spicy notes of the cinnamon bring a warm and cozy element to balance fresh or roasted strawberries. And using brown sugar with its caramel flavors enhances the cozy vibe even more. Yes warm cobbler studded with ruby-red strawberries really is an appropriate and easy dessert for February!

Simple ingredients for homemade strawberry cobbler
- Strawberries – Use fresh berries for this recipe. I would not recommend using frozen strawberries because it will make the texture of the cobbler too wet.
- Dry Ingredients – A simple mixture of all-purpose flour, baking powder, cinnamon and salt.
- Butter – Melt the butter directly in the baking dish as you slice the strawberries.
- Brown Sugar – To sweeten both the fresh strawberries and the cobbler.
- Whole Milk and Vanilla Extract
Instructions for homemade cobbler
Preheat oven to 350 degrees F. Wash, hull and slice the strawberries. Stir in two tablespoons of brown sugar. Allow them to macerate at room temperature for about 10 minutes to release their natural juices. Then drain the juices away.
Place the butter in the baking dish and put it in the oven to melt. Meanwhile in a bowl or glass measuring cup, whisk together the remaining 1/2 cup of brown sugar with the vanilla and whole milk. In a separate large bowl, whisk together the flour, baking powder, cinnamon and salt. Pour the wet ingredients into the bowl with the dry ingredients. Use a spatula to stir until a smooth batter forms.
Remove the dish with the melted butter from the oven. Pour the cobbler batter over top. Use the tip of a knife to swirl it together so all the melted butter isn’t pooling at the edges of the dish. Carefully spoon the sugared strawberries over top. Bake for 45-50 minutes, or until the cobbler is golden brown and springs back lightly to the touch. Serve warm cobbler slices topped with a little vanilla ice cream.

Storage directions
Cover the dish tightly with plastic wrap. The cobbler will stay fresh at room temperature for up to 2 days. Or put leftover cobbler in an airtight container to store in the refrigerator. It will stay fresh for 3 to 5 days.

Ingredients
- 16 oz fresh strawberries
- 5/8 cup brown sugar divided
- 5 tbsp butter melted
- 1 1/8 cups all-purpose flour
- 1 1/4 tsp baking powder
- 1 tsp cinnamon
- 1/4 tsp salt
- 3/4 cup whole milk
- 1 tsp vanilla extract
Instructions
- Preheat the oven to 350°F.
- In a clean bowl, stir together the strawberries and 1/8 cup of brown sugar. Set aside to macerate.
- Add the butter to an 8x8-inch baking dish and place in the preheated oven until the butter is melted.
- Meanwhile in a bowl or glass measuring cup, whisk together the remaining 1/2 cup of brown sugar with the vanilla and milk. In a separate large bowl, whisk together the flour, baking powder, cinnamon and salt. Pour the wet ingredients into the bowl with the dry ingredients. Use a spatula to stir until a smooth batter forms.
- Carefully remove the baking dish from the oven and pour the batter over the melted butter. Use a knife to swirl the batter and melted butter together so the butter isn't all pooling at the edges.
- Drain the strawberries. Carefully spoon the strawberries over top of the cobbler.
- Bake for 45-50 minutes or until the batter is golden brown and the strawberry juices are bubbling. Serve warm with vanilla ice cream.
