I love baking and using strawberries in all different types of recipes. My latest favorite is these Strawberry Oats. Old-fashioned oats are cooked on the stovetop with freeze-dried strawberries. They are so quick and easy to make. And they taste way better than the instant oatmeal packets. Plus you can control and customize the ingredients you add to the oats. I also use fresh strawberries, Greek yogurt and strawberry jam for a big punch of strawberry flavor. This is a creamy bowl of oatmeal your whole family is sure to enjoy.

Ingredients for strawberry oatmeal

Oatmeal

  • Oats – This recipe is written for rolled oats or old-fashioned oats. They cook on the stove top quickly. If you can’t have gluten or watching your gluten intake, make sure you look for gluten-free oats. This is not a recipe for steel-cut oats or quick oats.
  • Water – I always cook oatmeal in water. But you can use your own milk of choice instead. Some good plant-based milk for this recipe are almond milk, coconut milk, cashew milk, oat milk or soy milk.
  • Butter – Fat adds flavor. I like to cook my oats with a tablespoon of butter. You can leave it out if you are on a lower fat diet.
  • Sugar – I use just one tablespoon of granulated sugar to sweeten a whole cup of uncooked oatmeal (4 servings). You could use pure maple syrup or a sprinkling of brown sugar as a sweetener instead.
  • Chia Seeds – I like adding a tablespoon of chia seeds to my oats to amp up the fiber content. I like the texture they add to the cooked oats as well. But you can leave them out if you prefer.
  • Salt – Just a pinch of salt helps to balance the sweet favors in the oatmeal.
  • Freeze-dried Strawberries – Use a one-ounce package of freeze dried strawberries to help flavor the oats. Use your hands to squeeze and break the berries up in the package before cooking them with the oatmeal.

Mix ins

  • Vanilla Extract – Stirring in a little vanilla extract after cooking helps to add more flavor to the oats. You could use almond extract instead.
  • Yogurt – I used plain Greek yogurt to add a little tang and creaminess to each serving of strawberry oatmeal.
  • Strawberry Jam – Swirled into the cooked oats, seedless strawberry jam adds an even more robust strawberry flavor to the oats.
  • Fresh Strawberries – Slice sweet strawberries on top to garnish and add even more flavor to your bowl of oatmeal.
  • Variations with other favorite toppings – Swirl in some almond butter and add a sprinkle of cinnamon for an even more decadent flavor experience in your oatmeal bowl. Add chocolate chips for chocolate strawberry oatmeal. You could even swap out the strawberries for blueberries to make blueberry oatmeal.

Instructions

Bring the water and butter to a boil in a non-stick saucepan over medium heat. Lower the heat and stir in the oats, freeze-dried strawberries, chia seeds, sugar and pinch of salt. Simmer and cook for 4 – 5 minutes, stirring often, until the water has absorbed and the oatmeal is soft.

Off the heat stir in the vanilla, yogurt and strawberry jam. Spoon the oatmeal into small bowls. Garnish with fresh strawberries, more yogurt and more strawberry jam. Serve immediately.

Serving suggestions and more great oatmeal recipes

This recipe can make two large servings of oatmeal. But I personally like to serve it as four smaller servings as part of a hearty breakfast on the weekend, especially during strawberry season. Serve this homemade oatmeal with hardboiled eggs or these scrambled egg toasts. Maybe add some broiled grapefruit halves or frozen fruit salad.

Storage directions

If you have any leftover oatmeal, store it in an airtight container in the refrigerator for up to two days. Add a little milk to it to loosen it up and microwave to reheat.

Ingredients

  • 1 cup old fashioned oats
  • 1 oz freeze-dried strawberries
  • 1 3/4 c water
  • 1 tbsp butter
  • 1 tbsp granulated sugar
  • 1 tbsp chia seeds
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 2 tbsp plain Greek yogurt
  • 1 tbsp seedless strawberry jam

Instructions

  • Add the water and butter to a small saucepan. Over medium heat, bring the water and butter to a boil.
  • Reduce the heat to medium-low. Stir in the oatmeal, crushed freeze-dried strawberries, chia seeds, sugar and salt.
  • Cook, stirring often, for 4 - 5 minutes, or until the liquid has been absorbed and the oatmeal is softened and thick.
  • Remove the pan from the heat. Stir in the vanilla, 2 tablespoons of yogurt and 1 tablespoon of strawberry jam.
  • Spoon into serving bowls. Garnish each bowl with fresh chopped strawberries, more yogurt and strawberry jam. I like to microwave the jam to make it liquid and drizzle over the top. Serve immediately.
