Some nights for dinner you just need a simple bowl of ramen and then call it a day. These saucy noodles most definitely have their place. But just a packet by themselves always left me hungry again shortly after. It was never “stick to my ribs” food. That’s easily solved by stirring in some peanut butter. It adds some good fats and protein. While this peanut butter ramen recipe isn’t really a “healthy” dinner, it’s easy and cheap. When I’m getting to the end of the month and realizing how much money I spent on groceries? This is a meal I rely on to get back on budget.

Ingredients for spicy peanut butter ramen noodles

  • Instant Ramen Noodles – This chicken flavor ramen noodle soup is what can be easily found at most grocery stores. You can use your own favorite noodle brand with seasoning packet.
  • Peanut Butter – A couple of tablespoons of peanut butter adds so much good favor and even a little sweetness. It gives these noodles somewhat of a Thai influence. You could use almond butter if you want in place of the peanut butter.
  • Soy Sauce – I use a low sodium soy sauce. If you’re concerned about sodium, you can skip the addition of soy sauce.
  • Lime Juice – I like the convenience of using a bottled lime juice. But you could instead squeeze in the fresh juice from some lime wedges.
  • Red Pepper Flakes – I like my noodles with a kick. If you like yours really spicy, add more red pepper flakes, or even some chili oil or chili paste. If you don’t like spice, skip the red pepper altogether.
  • Cold Water – For boiling the noodles. Be sure and read the package directions as brands of ramen will vary in how much water they call for.

Instructions for easy peanut butter ramen

This comforting bowl of ramen is as easy to make as boiling water. Keep scrolling for my free printable recipe card – with full list of ingredients and instructions.

Variations

  • Lean Protein – Add some cooked chicken breasts or crispy tofu.
  • Type of Noodles – You could swap out an instant ramen package for soba noodles or wheat noodles cooked in chicken broth. Although it won’t have as much flavor as these chicken instant ramen noodles do.
  • Type of Peanut Butter – I prefer creamy peanut butter because that is what I always have on-hand. But use crunchy peanut butter if that is what you like instead.
  • Favorite Vegetables – Add bean sprouts, sliced green onions or bell peppers.
  • Sweetener – I don’t think it’s necessary, but if you’d like a sweet and hot peanut butter sauce, add a little maple syrup or brown sugar.

Serving suggestions

I love slicing up a fresh cucumber to snack on with this ramen. Or pairing it was fresh apple slices. Here’s some of my recipes to help make this a complete and well balanced meal –

Storage directions

You can store any leftover ramen in an airtight container in the refrigerator for 2-3 days. Although I think it best served fresh right after you make it.

  • Set of Pyrex glass measuring cups for measuring the water
  • Decorative bowls for serving the ramen

Ingredients

  • 1 pkg instant ramen I like chicken flavor
  • 2 tbsp peanut butter
  • 1 tbsp low sodium soy sauce
  • 1 tbsp lime juice
  • 1 tsp red pepper flakes
  • 2 cups cold water

Instructions

  • In a non-stick sauce pan over high heat, bring the water to a boil.
  • Add the ramen noodles and cook for 3 minutes, until noodles are separated and soft.
  • Stir in the seasoning packet.
  • Remove the pan from the heat. Stir in the peanut butter until melted.
  • Add the soy sauce, lime juice and red pepper flakes. Add to a bowl and serve immediately.
