My easy mummified baked brie is a spooky Halloween appetizer for the adult crowd. Onions and mushrooms browned in butter. Flavored with a little Dijon mustard, splash of apple cider and fresh thyme. Sandwiched inside the wheel of brie that’s wrapped in “bandages”. Store-bought puff pastry sliced into strips. Two slices of black olives added after baking are its eyes. Take it out of the oven, add your dippers right onto the baking sheet and dig in. It’s scary how delicious this mummy brie is!

Ingredients for mummy brie

  • Brie Cheese – I used an 8 oz wheel of Brie cheese for this recipe.
  • Filling Mixture – Fresh ingredients turn this quick and easy appetizer into a gourmet eating experience! Butter, onion, cremini mushrooms, apple cider, Dijon mustard, fresh thyme, salt and cracked black pepper.
  • Puff Pastry Bandages – You can use frozen or refrigerated puff pastry. I like the refrigerated variety because then I don’t have to remember to thaw it. For testing purposes, I used half of a 13.2 oz package of JusRol refrigerated puff pastry.
  • Eyes – Just two slices of black olives, added after baking.
  • Dippers – For testing and photography I chose whole grain crackers and green apple slices. You could also use baguette slices, pretzels or celery sticks.

Instructions

Preheat the oven to 425 degrees F. Line a small baking sheet with parchment paper.

Melt the butter over medium heat in a nonstick skillet. Add the mushrooms and onion. Season with salt and pepper and allow to brown, stirring occasionally. Pour in the apple cider, add the Dijon mustard and sprinkle in the fresh thyme. Stir and allow to simmer for a couple of minutes. Remove from heat and let cool a bit.
Slice the wheel of Brie in half. Spread the mushroom mixture on top and then sandwich it back together. Wrap the puff pastry strips around the Brie to resemble a mummy. Place the wrapped Brie onto the prepared sheet pan. Bake at 425 degrees F for 25 minutes until golden brown. Serve with crackers and green apple slices. Or whatever sounds good to you.

Serving suggestions

This mummified brie is begging to be the centerpiece of a charcuterie board. Instead of serving it quickly from the baking sheet, you can transfer it to a bigger board. Then surround it with grapes, pears, cucumber slices, mixed nuts, dried fruit, cured meats and more cheeses.

Or here’s some more of my recipes to turn this spooky appetizer into a complete meal –

  • Wicked Black Bean and Ghost Pepper Sausage Soup
  • Roast Pumpkin Salad
  • Bloody Eyeball Cheesecakes

Storage directions

You can wrap leftovers tightly in foil or store in an airtight container. They will stay fresh for 1-2 days. Reheat in the oven at 350 degrees F until the cheese softens. I don’t recommend freezing leftover baked brie.

Kitchen tools

  • My favorite nonstick skillet
  • 9×6 sheet pans similar to what I used for testing
  • I prefer to use unbleached parchment paper
