If I had to choose my favorite beverage besides water it would be iced tea. And I might be in the minority in that I prefer my iced tea to be UN-sweet. So I brew my own at home a lot. Especially during the summer. It reminds me of growing up because my mom made a fresh batch of sun tea each week.

For a change I decided to combine the flavors of a classic Mojito cocktail with brewed iced tea. I love the flavors of fresh mint and lime together. It’s a great welcome for warmer weather. But I don’t want to be sipping rum all day long. I’ll leave the day drinking to Captain Jack Sparrow.

Ingredients for mojito iced tea

  • Tea Bags and Water – Standard black tea bags, like Lipton, are my typical choice for brewing iced tea. But feel free to use your personal favorite type and brand of bagged tea.
  • Sugar – The sugar is added to the boiling water so that it fully dissolves into the iced tea mixture.
  • Mint and Lime – Classic flavor pairing for a traditional Mojito cocktail. The iced tea is both flavored and garnished with lime juice, sprigs of mint and lime slices.
  • Variations – This recipe is just lightly sweet. If you prefer a more sweet tea, add an additional 1/4 cup of sugar. If you’d like a sparkling version of this drink, more like a Mojito mock tail, simply top each drink off with some club soda or Sprite.

Instructions

Add eight cups of water and 1/4 cup of sugar to a large saucepan or stock pot and bring it to a boil until the sugar dissolves. Remove it from the heat. Submerge the tea bags and mint leaves in the sugar water, cover and allow it to brew for 5 minutes. Longer if you like a stronger tea flavor.

Remove the tea bags and mint leaves. Pour the mixture into a one gallon sized pitcher or jug. Pour in the remaining 8 cups of water and 1/4 cup of lime juice. Allow to chill in the refrigerator overnight.

Serve the tea over ice and garnished with fresh mint leaves and a lime slice or lime wedge.

Serving suggestions

Mojito Iced Tea pairs well with light and spicy foods. Here’s some recipe suggestions to make a complete meal –

  • Baja Fish Tacos
  • Homemade Guacamole
  • Bean and Rice Salad
  • Lemon Bars with Graham Cracker Crust

Storage directions

Stored in an airtight container, the iced tea will stay fresh in the fridge for up to five days. Pour any extra tea into ice cube trays and freeze for up to one month. Use them to chill more iced tea. As they melt they won’t dilute the flavor of your drink.
