I’ve mentioned a few times my kids are on the swim team. It consumes a lot of our time. In fact as I am typing this my kids are already asleep next to me in a hotel in Louisville – preparing for the first day of a big swim meet in the morning.

Mint Chocolate Muffins

The thing about swim meets is you are sitting by the pool for a very long time for a very short amount of actual race time. They have a captive and very hungry audience so the snack bars at swim meets are always pretty good. One thing that is usually pretty popular with the swimmers is a gigantic chocolate muffin. They are huge and dense and filled with chocolate chips. Those muffins are what I had in mind when I made these muffins.

I’m not sure I had ever made a homemade chocolate muffin. I found this recipe here and swapped out the yogurt for sour cream and used chopped Andes mints instead of chocolate chips. We are right at the beginning of December and the mint chocolate just seemed more festive. All four of us love the classic combination of mint and chocolate and they made a good snack to bring along with us for the weekend.

Ingredients

  • 2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup Andes mints chopped
  • 1/2 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 large egg
  • 1 cup sour cream
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/4 cup Andes mints chopped

Instructions

  • Preheat oven to 400 degrees F. Grease 18 muffin cups or line with paper muffin liners.
  • Combine flour, sugar, 1 cup Andes mints, cocoa powder, baking soda and salt in a large bowl. Whisk egg, sour cream, milk, vanilla, and vegetable oil in another bowl until smooth; pour into chocolate mixture and stir until batter is just blended. Fill prepared muffin cups about 2/3 full and sprinkle with remaining 1/4 cup chopped Andes mints.
  • Bake in preheated oven until a toothpick inserted into the center comes out clean, about 15 - 18 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.

    Vanilla is included on the instructions, but it’s not on the supplies list … we’re adding half a teaspoon to see what it does. Clarification would be appreciated.

      Thank you for catching this error. I have fixed it. Should be one teaspoon of vanilla.
