Something that I like to do is go shopping in my house and see what fully satisfying family dinner I can create with the randomness that I often find gets shoved to the back of the pantry, fridge or buried at the bottom of the freezer. It’s like a scavenger hunt with a surprising find every time!

Easy Egg and Rice Bowl with Uncle Ben's® by Foodtastic Mom

A couple weeks ago I did this and created an egg and rice bowl. The rice was plain so I threw a bunch of random things in it (pickled jalapeño’s, some bottled red wine vinaigrette, mashed avocado) to flavor it. Weird and not exactly typical. But I’m a food blogger so I like to experiment.

Crazy enough, my husband and kids actually liked it. My two kids are all about “runny” eggs lately so they thought the rice bowl was fun and tasted good. I liked it because it was a cheap and satisfying meal. But even I don’t have time during the school year now to be experimenting during the week. I need food on the table NOW!

That’s why I like the Uncle Ben’s® variety of rices I find at my Kroger because it takes the guess-work out of dinner planning and trying to flavor plain rice… because correctly flavored rice is yummy and plain rice is meh. I chose the Uncle Ben’s® Brown Rice Medley Roasted Garlic & Herb for this easy egg and rice bowl because it put me in mind of an Italian Risotto. But this recipe would be equally as delicious with Uncle Ben’s® Long Grain & Wild Rice Fast Cook Recipe and Uncle Ben’s® Long Grain & Wild Rice, Original Recipe. 

Uncle Ben's® Brown Rice Medley Roasted Garlic & Herb

I added some frozen peas, a freshly cooked egg and some good Parmesan cheese and called it dinner. It’s barely a recipe and is on the table FAST. Plus the garlic flavor packet made my kitchen smell divine!

Easy Egg and Rice Bowl with Uncle Ben's®

Servings 4

Ingredients

  • 1 box Uncle Ben's® Brown Rice Medley Roasted Garlic & Herb
  • 1 1/2 c. frozen peas
  • 4 large eggs
  • 1 T. butter
  • black pepper
  • salt
  • Parmesan cheese freshly grated

Instructions

  • Prepare the Uncle Ben's® Brown Rice Medley Roasted Garlic & Herb according to package directions. With about 5 minutes left of cooking, add the peas to the cooking rice.
  • Meanwhile, melt butter in a large, non-stick skillet and cook eggs over-easy.
  • Divide rice and pea mixture evenly between four bowls. Top each bowl with one egg. Sprinkle with pepper and salt and grated Parmesan cheese.
