Ingredients
2.5 to 3lbsbeef stew meatcut into 1-inch cubes
1sweet onionpeeled and sliced
6medium (about 1 pound)carrotspeeled and sliced
2tbspunsalted butter
3tbspall-purpose flour
1tspsalt
1/2tspthyme
1/2tspblack pepper
1cupGuinness beer
110.5 ozbeef consommé or beef broth
1tbsplight brown sugar
1/4cupbittersweet chocolate chipsI use Ghirardelli brand
Instructions
To a 6 or 8 quart slow cooker set on low heat, add the sliced onions and carrots.
In a large, non-stick skillet, heat the butter over medium heat until melted. Add the beef and cook until starting to brown, about 5 minutes.
Sprinkle the flour, salt, thyme and pepper over the beef and stir until coated.
Pour in the Guinness and bring to a strong simmer. Add the beef consommé, brown sugar and chocolate and allow to simmer for a few minutes until the sauce is thickening.
Pour the beef mixture into the slow cooker. Stir to combine. Cover and cook on low heat for 6 to 8 hours. Serve the stew with mashed potatoes and peas.
