Wash the potatoes under hot water. Use a paring knife to stab each potato a few times. This allows steam to escape as they cook.
Put the potatoes in the basket of your air fryer.
Roast at 375 degrees F for 40 minutes, flipping over halfway through cooking time.
Once they are easily pierced with a fork they are done cooking.
Notes
I mixed together 1/4 cup chopped pecans, 2 tablespoons of brown sugar, 1/2 teaspoon salt and 1/4 teaspoon pumpkin pie spice.Split each potato and top evenly with the brown sugar mixture and then top each sweet potato with a pat of butter. Heat the potatoes in the air fryer for one additional minute to melt the butter.
