Parmesan Polenta

Ingredients

  • 4 cups water
  • 1 cup stone-ground cornmeal
  • 1 tsp salt
  • 4 tbsp unsalted butter
  • 2 large eggs beaten
  • 4 oz Parmesan cheese 1 cup grated
  • 2 cloves garlic minced

Instructions

  • Preheat oven to 350 degrees F.
  • Grease an 11x7 casserole dish and set aside.
  • In a 3-4 quart nonstick saucepan, combine the cornmeal, water and salt. Cook over medium heat until it begins to gently simmer. I don't bring it to a full boil. Turn the heat to the lowest setting and cover the pot. Stir with a wooden spoon or rubber spatula just about every 10 minutes. Simmer for 40 minutes until it is thick with a creamy texture.
  • Remove the pot from the heat. Add the butter and garlic and stir until the butter is melted.
  • Stir quickly as you add the beaten eggs and stir until well incorporated. Add the Parmesan and stir until well combined.
  • Pour the polenta mixture into a casserole dish. Bake at 350 degrees F for 40 - 45 minutes, just until the middle is set. Serve immediately.
