Burrata Bruschetta

Burrata Bruschetta is a quick to make and delicious appetizer combining burrata cheese with a homemade kalamata olive relish.

Ingredients

  • 2 balls burrata cheese
  • 1/4 cup kalamata olives finely chopped
  • 1 tbsp fresh parsley or a mix of your favorite fresh herbs
  • 2 tbsp extra virgin olive oil divided
  • 1 clove garlic
  • 1/2 tsp red pepper flakes
  • 1 tsp lemon zest optional
  • 1/4 tsp salt
  • 1/4 tsp cracked black pepper
  • 1 French baguette

Instructions

  • The first step is preparing your bread slices. Move one of your oven racks to the upper third and turn on your broiler. Slice the baguette into about 1/2-inch slices and place them on a cookie sheet in a single layer. Broil the bread until it is lightly toasted. Keep an eye on it. I am notorious for starting to do something else and forgetting I just put bread in the hot oven!
  • Once the baguette slices are toasted, drizzle them lightly with one tablespoon of the extra virgin olive oil. Then rub each slice of bread with a peeled clove of garlic. 
  • Finely chop the kalamata olives. Mix them together with the fresh parsley (or herb mixture), the remaining olive oil, red pepper flakes, salt and pepper. Add some lemon zest too. Or use green olives instead of kalamata.
  • Place the burrata cheese onto a rimmed plate. Spoon the olive "relish" on top of the cheese. Be sure to set out a couple of knives, or even spoons, to dip into the cheese and olive mixture, to spread it on each slice of bread.
