Cucumber Bruschetta

Cucumber Bruschetta is a mix of fresh cucumbers, pickles, red pepper, onion and dill that is so simple to make and sure to be a crowd pleaser.

Ingredients

  • 1 French baguette sliced and toasted
  • 8 oz cream cheese
  • 2 tbsp dill pickle juice
  • 1 tbsp fresh dill finely chopped
  • 1/2 English cucumber chopped
  • 1/2 cup dill pickles finely chopped
  • 1/3 cup red pepper finely chopped
  • 1/4 cup red onion finely chopped
  • 1 tbsp dill pickle juice
  • 1 tbsp olive oil
  • 1 tbsp fresh dill finely chopped
  • 2 tsp sugar
  • 1 tsp salt

Instructions

  • With a hand or stand mixer, whip together the cream cheese, 1 tablespoon of pickle juice and 1 tablespoon of dill. Place in bowl and cover until ready to use.
  • In a clean bowl, mix together the fresh cucumber, pickles, red pepper, red onion, 2 tablespoons of pickle juice, olive oil, remaining tablespoon of dill, sugar and salt. Allow to marinate for at least one hour before serving.
  • To serve, spread some of the cream cheese on the toasted baguette slices and top with the cucumber pickle mixture.
