With a hand or stand mixer, whip together the cream cheese, 1 tablespoon of pickle juice and 1 tablespoon of dill. Place in bowl and cover until ready to use.
In a clean bowl, mix together the fresh cucumber, pickles, red pepper, red onion, 2 tablespoons of pickle juice, olive oil, remaining tablespoon of dill, sugar and salt. Allow to marinate for at least one hour before serving.
To serve, spread some of the cream cheese on the toasted baguette slices and top with the cucumber pickle mixture.
