Healthy Shepherd's Pie

Healthy Shepherd's Pie is pure comfort food, incredibly satisfying but uses ground turkey, lots of veggies and mashed cauliflower.

Ingredients

  • 2 tbsp butter
  • 1 lb 99% fat free ground turkey
  • 10 oz frozen mixed vegetables I use Birds Eye
  • 2 cups pasta sauce I use Ragu Simply Traditional
  • 2 tbsp Worcestershire sauce
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 24 oz Refrigerated mashed potatoes I use Bob Evans
  • 12 oz Frozen mashed cauliflower I use Birds Eye
  • 1/2 cup Whipped chive cream cheese I use Philadelphia
  • 1/2 cup Mozzarella cheese shredded
  • 2 tbsp Fresh parsley finely chopped

Instructions

  • Melt two tablespoons of butter into a non-stick sauté pan over medium heat.
  • Add the ground turkey and cook, breaking up the meat into small pieces, until no longer pink.
  • Add the bag of frozen mixed vegetables and 2 cups of pasta sauce. Stir to combine.
  • Add the Worcestershire sauce, salt and pepper. Stir well and allow the filling to heat until simmering.
  • Spread the turkey mixture evenly into a glass baking dish and set aside.
  • Heat both the mashed potatoes and mashed cauliflower according to package directions. Combine them in a bowl with 1/2 cup of the whipped cream cheese. Mix until smooth.
  • Spread the potato and cauliflower mixture evenly over the top of the turkey mixture. Top the potatoes with about 1/2 cup of shedded mozzarella cheese.
  • Bake the Healthy Shepherd's Pie in a 400 degree F oven for about 30 minutes, or until the cheese is browning on top and the mixture underneath is bubbling. Sprinkle the top with fresh parsley before serving.
