Chicken Divan

My Mom's recipe for Chicken Divan could not be more simple to make or more comforting to eat. Use a rotisserie chicken for quick prep.

Ingredients

  • 1 rotisserie chicken white meat shredded (reserve dark meat for another recipe)
  • 16 oz frozen broccoli florets
  • 10 oz cream of chicken soup
  • 1/2 cup mayonnaise
  • 2 tsp lemon juice
  • 1/2 tsp salt
  • 2 cups cheddar cheese shredded
  • 1/3 cup Panko bread crumbs
  • 2 tbsp butter melted

Instructions

  • Preheat the oven to 350 degrees F.
  • Microwave the broccoli florets according to package directions. Drain and chop into bite-sized pieces.
  • In a large bowl, whisk together the cream of chicken soup, mayonnaise, lemon juice, salt and one cup of the cheddar cheese.
  • Fold in the shredded white meat chicken and the cooked broccoli.
  • Spread the chicken mixture evenly into a greased casserole dish. Top the casserole with the remaining cup of cheddar cheese.
  • Sprinkle the top of the casserole evenly with the bread crumbs. Then drizzle the melted butter over the top.
  • Bake the casserole, covered with foil, for 30 minutes. Uncover the dish and bake for 15 minutes more. Serve hot.
