Preheat a non-stick, electric griddle to 400 degrees.
In a large bowl, whisk together the dry ingredients, flour through salt.
In a separate bowl, whisk together the milk, egg, vanilla and melted butter.
Pour the milk mixture into the flour mixture. Stir together with a wooden spoon or spatula until no flour streaks remain. Stir in the mini chocolate chips.
Make small pancakes by dropping 1 1/2 tablespoons of batter for each pancake onto the heated griddle. Cook until bubbles form. Flip and cook for about 2 minutes more.
Serve pancake stacks warm topped with vanilla ice cream, chocolate syrup, whipped cream and cherries.
