Brownie Pancake Sundae

Ingredients

  • 1 1/3 c. flour
  • 3 T. dark chocolate cocoa powder
  • 2 t. baking powder
  • 1/4 c. sugar
  • 1/4 t. salt
  • 3 T. unsalted butter melted
  • 1 t. vanilla extract
  • 1 1/4 c. milk
  • 1 large egg
  • 1/2 c. mini chocolate chips I used Ghirardelli brand
  • vanilla ice cream
  • chocolate sauce
  • whipped cream
  • maraschino cherries

Instructions

  • Preheat a non-stick, electric griddle to 400 degrees.
  • In a large bowl, whisk together the dry ingredients, flour through salt.
  • In a separate bowl, whisk together the milk, egg, vanilla and melted butter.
  • Pour the milk mixture into the flour mixture. Stir together with a wooden spoon or spatula until no flour streaks remain. Stir in the mini chocolate chips.
  • Make small pancakes by dropping 1 1/2 tablespoons of batter for each pancake onto the heated griddle. Cook until bubbles form. Flip and cook for about 2 minutes more.
  • Serve pancake stacks warm topped with vanilla ice cream, chocolate syrup, whipped cream and cherries.
