Slow Cooker Sloppy Joes with Rotel

Ingredients

  • 1 T. vegetable oil
  • 1 red pepper seeded and chopped
  • 1 sweet onion minced
  • 1/2 t. salt
  • 1/2 t. garlic powder
  • 1/2 t. cumin
  • 1/2 t. smoked paprika
  • 3 T. tomato paste
  • 2 cans mild Rotel tomatoes, drained
  • 1/3 c. packed light brown sugar
  • 2 T. Worcestershire sauce
  • juice of one half lime
  • several shakes of Chipotle Tabasco sauce
  • 2 lbs. lean ground beef
  • salt and pepper

Instructions

  • Heat oil in a large sauce pan over medium meat. Add the pepper and onion and cook until beginning to soften, about 5 minutes. Add the seasonings and tomato paste and stir well to combine. Continue cooking and stirring for a couple of minutes to really distribute the tomato paste.
  • Add the Rotel tomatoes, brown sugar, Worcestershire sauce, lime juice and Tabasco. Cook about 5 more minutes.
  • Transfer sauce to a blender and allow to cool a bit. Blend the sauce until smooth and add to the slow cooker set on low.
  • Cook and drain the ground beef. Season with salt and pepper. Add it to the slow cooker with the sweet and spicy sloppy joe sauce.
  • Stir well to combine and allow the sloppy joes to cook for a couple of hours on low before serving.
  • Serve the sliders with guacamole, shredded cheese and crushed corn chips.
