Heat oil in a large sauce pan over medium meat. Add the pepper and onion and cook until beginning to soften, about 5 minutes. Add the seasonings and tomato paste and stir well to combine. Continue cooking and stirring for a couple of minutes to really distribute the tomato paste.
Add the Rotel tomatoes, brown sugar, Worcestershire sauce, lime juice and Tabasco. Cook about 5 more minutes.
Transfer sauce to a blender and allow to cool a bit. Blend the sauce until smooth and add to the slow cooker set on low.
Cook and drain the ground beef. Season with salt and pepper. Add it to the slow cooker with the sweet and spicy sloppy joe sauce.
Stir well to combine and allow the sloppy joes to cook for a couple of hours on low before serving.
Serve the sliders with guacamole, shredded cheese and crushed corn chips.
