Another holiday, another lunch! Green smoothies are all the rage, so this was my obvious choice to anchor Caleb’s St. Patrick’s themed lunch. I made it after he went to bed, so he didn’t see the huge handful of fresh spinach that went into it. As far as he knows, it’s green food coloring. I’m sharing my super-simple version of a green smoothie at the end of this post, but there are a ton of variations on this popular trend, so add what appeals to you and your kids the most.
The green tortilla was another easy way to be festive, and I filled it with scrambled cheesy eggs and a bit of sour cream. Your kids may think this is gross, so fill the wrap with their personal favorites. Caleb though is an egg-head, which I love because he’ll eat them hard-boiled, scrambled, over-easy, whatever, any time of day. I buy free-range, and it’s still the most inexpensive and good-for-you protein source I can give him.
I rounded-out his lunch with some pretzel chips and Lucky Charms… I wonder how much the sales of Lucky Charms increase this time of year? It’s the only time I personally buy them.

- 1 (6 oz.) container Chobani Apple Cinnamon Greek Yogurt
- 1 banana, sliced and frozen
- 1 c. fresh baby spinach
- 1/4 c. skim milk (or more to blend everything together)
- Place all ingredients in a large cup and blend with a stick blender until smooth. Or use your blender appliance, if you don’t own a stick blender.
