My kids are crazy for guacamole. And my 2nd grader in particular happens to be crazy for tuna salad in her lunch. So when I was introduced to THIS recipe for a chicken salad made with healthy avocado, Greek yogurt and lime juice, I decided tuna would be a fun substitute.
Not only does tuna contain those healthy Omega 3’s we’ve heard so much about, but during a busy week, opening a few pouches or cans of Bumble Bee tuna from my pantry is preferable to poaching some chicken breasts.
This tuna salad really does think it’s guacamole. In addition to the dressing of mashed avocado, Greek yogurt and lime juice, it contains some fresh chopped red onion, cilantro, celery and little salt. Dipping all-natural blue corn tortilla chips into this delicious salad completes the guacamole comparison. Of course, not all children are going to cheer for cilantro or even onion or celery in their lunch. If that’s the case, simply omit it from your guaca-tuna salad. Or pack this fun lunch for yourself as a treat. Even though I work from home, I sometimes pack my own lunch the night before when I’m packing for both kids… it’s a time-saver and ensures I eat a healthy lunch the next day… usually sitting at my computer screen.
I was easily able to find these 5 ounce pouches of Bumble Bee tuna at my local grocery store. I chose the premium albacore tuna for my guaca-tuna salad, but it also comes in a light tuna variety and in cans as well as pouches. As for my kiddos lunch box, in addition to the guaca-tuna salad with blue tortilla chips for dipping, I included some fresh sliced peppers and white chocolate pudding (another lunch-time favorite) topped with fresh strawberries and dark chocolate chips. They both are allowed snacks during the day, so I also packed them each a banana and some graham crackers. They were happy with their lunch and so was I!

Guaca-Tuna Salad School Lunch with Bumble Bee Tuna
Ingredients
- 3 5 oz. pouches of Bumble Bee Premium Albacore Tuna
- 1/2 fresh avocado
- 1/2 c. fat-free Greek yogurt
- 1/4 c. fresh lime juice
- 3 celery stalks diced
- 1/2 c. red onion minced
- 1/2 c. cilantro minced
- salt to taste
Instructions
- In the bottom of a medium bowl, mash together the avocado, yogurt and lime juice until well mixed. Toss in the tuna, celery, red onion, cilantro and salt. Stir well to mix and refrigerate until ready to use. Serve with tortilla chips for dipping.

Hmmm…I wonder if my kids would like this. They all love guacamole…to the point where I keep avocados in the house all the time. Might have to give this a try! Thanks for sharing it!
