Minions weren’t what came to mind when I used to think of England. But now they are. I don’t want to spoil it for you if you didn’t already see the Minions movie (Minions © 2015 Universal Studios, all rights reserved) in the theater this summer, but the lovable minion Bob manages to get himself crowned as the King of England and all sorts of hilarity ensues.
So it made sense for me when thinking about a Minions movie night at home to have some sort of British-themed snack. Trifles are most definitely kid-friendly. Sweet, vanilla sponge cake layered with fresh blueberries and lemony whipped cream. A delicious treat that is minion hued (yellow and blue) and celebrates Bob’s crowning by being topped with a (free printable) Union Jack flag – to print just click “Save As” on the flags and print at best quality. These berry trifles are almost as exciting as Illumination Entertainment deciding to give those lovable little minions their own movie!
Both of our children are minions fanatics. What about yours? Ever since they saw the first Despicable Me, they have been smitten, my son especially. He has a stuffed Bob minion that he sleeps with. He has a book that taught him to “speak” minion. We saw the movie in the theater and ever since the DVD was released on December 8th he’s been bugging me to buy it. So basically the fact that I get to write a blog post celebrating minions makes me the coolest mom ever (at least for a minute).
Googling the words “simple sponge cake recipe” gave me British blogs to visit as my first choices. However I am not well versed in metrics, celsius or things like “caster sugar” so I chose THIS recipe as my starting point instead. The cake was so quick and easy to make, not to mention delicious! But by all means if you are short on time, you could purchase an angel food cake at the store and cut it into cubes instead.
As for the lemon curd in the recipe, I was able to find a jar of it in the small international section of my grocery store. If you can’t find it or if your children aren’t fans of lemon, the great thing about trifles is they are completely customizable! You could use raspberry jam, or layer the cake with chocolate syrup and sliced bananas (an obvious minion favorite) and whipped cream instead… the possibilities of flavors are only limited by your imagination.
Unlike lemon curd however, the Minions movie Blu-Ray/DVD combo can easily be found at a whole lot of retailers listed HERE. You won’t have any trouble bringing those lovable little minions home with you for a fun movie night for the whole family. If you have a schedule like us, you’ve got a week or two of holiday break coming up so it’s the perfect time to take a little trip across the pond with Bob, Kevin and Stuart for a hilarious romp through jolly old England. Tally-ho!
Berry Trifles
Ingredients
for the cake
- 3/4 c. + 2 T. all-purpose flour
- 1 t. baking powder
- 3 large eggs at room temperature
- 3 large egg yolks at room temperature
- 3/4 c. sugar
- 1 t. vanilla extract
- 1/8 t. salt
- 1/4 c. whole milk
- 2 T. unsalted butter
for the toppings
- fresh blueberries
- 2 c. heavy whipping cream
- 1 c. powdered sugar
- 1/4 c. lemon curd
- 1 t. vanilla extract
Instructions
for the cake
- Preheat the oven to 350 degrees with the rack you'll be baking on in the bottom third of the oven.
- Spray an 8x8x2 square baking pan with cooking spray.
- In a small bowl, whisk together the flour and baking powder.
- In a stand mixer fitted with the paddle attachment, add the eggs, egg yolks, sugar, vanilla and salt. Beat this mixture on high until very pale and fluffy, 4-6 minutes.
- Meanwhile, heat the milk and butter together in a glass bowl or measuring cup in the microwave (about 2 minutes) until melted and hot, but not boiling.
- Once the egg mixture is pale and fluffy, sift the flour and baking powder mixture into it in three separate additions, mixing gently with a spatula after each addition.
- Then pour the hot milk and butter on top of the cake batter and stir until well combined.
- Pour the batter into the prepared pan. Tap the pan on the counter to burst any air bubbles.
- Bake 20-25 minutes until top of cake springs back easily when lightly touched.
- Allow to cool and then slice into squares.
for the toppings
- When ready to serve the individual trifles, with a hand or stand mixer whip together the cream, powdered sugar, lemon curd and vanilla until stiff peaks form.
- Layer in individual cups the cake squares, fresh blueberries and lemony whipped cream.
- Top each trifle with a Bob flag to serve.
