Broccoli Grilled Cheese
When I make broccoli for dinner, I steam it in the microwave. Just cut up the florets, place a bit of water in the bottom of a dish, salt it and microwave for about 5-6 minutes. Always I have leftover steamed broccoli hanging out in the fridge the next day. Sometimes I’m lucky and have a leftover baked potato to eat it with. Sometimes I chop it up cold and fold it into a wrap. Sometimes I saute it and add a couple of eggs and Sriracha sauce.

The other day in addition to my leftover broccoli, I had a couple of slices of Omegatron bread from my favorite baker, Blue Oven Bakery, sliced and ready in the freezer, some Muenster and Mango Fire Cheddar cheeses in the fridge, along with my standard bottle of Sriracha sauce, and that’s how this lovely sandwich was born. Omegatron bread by the way is 100% whole wheat sourdough, filled with flax seeds, steel cut oats, pumpkin seeds and walnuts. Any good bread will do for this sandwich, but if you live in Cincinnati, Ohio like me, I highly recommend seeking out Blue Oven Breads.

I sautéed the broccoli and mashed it up first. Then shredded the cheese and added it to both halves of the bread for maximum meltiness. Mostly Muenster with just a smidge of the Mango Fire Cheddar cause it is seriously spicy {I found it at my Target store of all places… and it’s a great cheese}. I finished the sandwich with a sprinkling of the Sriracha and fried it all up in a skillet. Trust me, it was true sandwich happiness. Not bad for leftover broccoli.

  1. 2 slices really good sandwich bread
  2. 1/2 c. leftover steamed broccoli
  3. Cooking spray (I use Trader Joe's Coconut Oil Cooking Spray)
  4. salt and pepper
  5. 1/2 c. shredded Muenster cheese (Mozzarella or Provolone would also work)
  6. 2 T. shredded Mango Fire cheese (optional)
  7. 1 t. Sriracha sauce
  8. 1 T. butter
  1. Heat a small, non-stick skillet over medium-high heat. Spray with cooking spray and add steamed broccoli. Season with salt and pepper. Saute, stirring frequently until broccoli is heated through and can be mushed up into very small pieces. Remove from heat.
  2. On two slices of bread, divide shredded cheese on both sides. Top one side with the sauteed broccoli and Sriracha sauce. Carefully press both slices of bread together to form a sandwich.
  3. Using the same skillet used to cook the broccoli, heat half the butter over medium heat. When melted, add sandwich and cook until well-browned.
  4. Remove sandwich, melt the rest of the butter into the skillet and return sandwich to skillet to brown the other side. Serve grilled cheese immediately.
